A premium blend of Merlot, Cabernet Sauvignon and Syrah made in a softer style for earlier consumption.
The Unison has a maceration time of around 16-18 days and ages for 12 months in oak, 2/3 of which is large casks of 3000 Litres and 1/3 barriques of French and American oak.
Incorporating the use of large casks in a significant way results in a wine which stands for itself where the oak flavours are well integrated and are not dominating the fruit flavours. This way of vinification is possible when the grapes arrive in such great condition from the vineyard.
The Unison 2000 has a deep violet/red colour. The bouquet shows rich black cherry aromas with a hint of vanilla. The palate is complex, soft, balanced and follows on nicely from the bouquet with strong berry flavours mellowed with chocolate/coffee notes.
This wine is very approachable when young but will certainly benefit from cellaring up to 5 years.
Being so well-balanced, this wine is an excellent accompaniment to fine food.
