Unison Sauvignon Blanc

Vineyard

Site and grape selection are essential in making fine Sauvignon Blanc and we chose the grapes for our Hawke’s Bay Sauvignon Blanc from a neighbouring property in the red triangle region. Carefully monitoring of the vineyard during the ripening period ensured we picked the grapes in the narrow window when flavours were ripe yet still distinctively “Sauvignon Blanc”.
 

Vintage 2010

The growing season kicked off relatively early in September 2009. The weather in spring was variable with particularly cold periods in October. The unsettled weather continued through early summer and it was not until February that Hawke’s Bay finally enjoyed consistently warm dry conditions. An amazing Indian summer then followed with average temperatures in the early 20s° C and little rainfall until May. These conditions were excellent for flavour development in our grapes and allowed for ideal grape maturity. Picking decisions were made on flavour with no weather or disease pressure influencing the timing.
 

Winemaking

 
Gentle handling has been the hallmark with the winemaking on our inaugural Sauvignon Blanc. Hand picked, followed by gentle whole bunched pressing and overnight settling of the juice started the winemaking process. 85 % the juice was then fermented in stainless steel tank at cool temperatures to highlight and preserve the lively sauvignon blanc aromas of ripe gooseberry, citrus and tobacco flower. We chose to ferment 15% in French oak barrels and let it ferment naturally to add a richer textural component to the wine. Both components were aged on lee for 3 months to build textural complexity. The wine was fermented dry and no additions of sugar or grape juice were made before bottling.
 

Tasting Note

 
Pale lemon with green highlights. Intriguing aromatics of ripe gooseberry, tobacco flower, lime peel and a touch of cinnamon. The palate is dense yet lively with complex flavours of zesty citrus and red gooseberry. A mineral streak runs through the wine giving focus definition and length. A flavoursome, well balanced, dry wine with a lingering refreshing finish. Enjoy with friends or your favourite food.
